Ingredients

  • 160 g short pasta
  • 1 pre-cooked beetroot
  • 1/2 red onion
  • 80 g creamy goat cheese
  • 80 g cooking cream
  • 50 g aged goat cheese for grating
  • 1 orange
  • 1 small piece of Granny Smith apple
  • 16 arugula leaves
  • 5 walnuts
  • 1 pinch of dill
  • extra virgin olive oil
  • salt
  • black pepper

Instructions

  1. Chop the half onion.
  2. Process the beetroot in a food processor until it reaches a puree texture.
  3. Cut a couple of apple slices into small squares and bathe them in a little orange juice.
  4. Sauté the half onion.
  5. When the onion is well softened, add the beetroot puree. Mix, taste, and season with salt and pepper. After 2 minutes, set aside.
  6. Heat the cream over low heat, add the creamy cheese, and stir so the cheese melts slowly. Season with salt and pepper and set aside.
  7. Bring plenty of water to a boil to cook the pasta. Salt once it boils and add the pasta.
  8. When the pasta is almost al dente, add it to the pan with the beetroot cream, which we have previously heated. Sauté, adding half a ladle of cooking water and a drizzle of olive oil.
  9. Plating: Place a couple of ladles of pasta on the plate. Decorate with a couple of spoonfuls of cream cheese, walnut pieces, apple cubes, a pinch of dill, a little orange zest, the arugula leaves, and a bit of grated cheese.
