During the holidays, preparing traditional dishes like lasagna not only enriches the table but also connects us with Italy’s rich cultural heritage. This dish, with its combination of flavors and textures, is an excellent choice for celebrating special moments.

The ragù is the soul of the lasagna. I prepare a mixture of beef and pork, ideally coarsely ground, with onion, carrot, celery, tomato, and red wine. A touch of pancetta or smoked bacon can add extra flavor, making this homemade lasagna a true delight. This ragù requires slow cooking, where the flavors intertwine and intensify, giving life to a meat sauce that is the base of our lasagna, especially if prepared in advance. We start by sautéing garlic, onion, and carrot, then add the meat. Selecting a good red wine is essential, as it brings a unique richness to the dish.

In this case, it is crucial not to cook them completely to prevent them from falling apart during baking. For lasagna with dried pasta, I do not boil it beforehand. The pasta will cook perfectly in the oven, thanks to the moisture from the lasagna ragù and the béchamel. Assembling the Lasagna: An Art in Layers
Assembly is an artistic and meticulous stage. We start with a layer of béchamel at the bottom of the pan, followed by the pasta sheets, a generous layer of ragù, and sprinkle with Parmigiano cheese. We repeat these layers carefully, always finishing with a final layer of béchamel and cheese.
Final Baking: The Culmination of the Process
Baking is the magical moment where all the components of the lasagna come together. We bake at 180°C until the surface is golden and bubbling, which usually takes about 40 minutes. This final step is crucial for the flavors to fuse and the texture to be perfect. It is important to let the lasagna rest once assembled, before serving. This helps it maintain its shape and consistency, ensuring that each portion is perfect.

Ingredients
For the ragù
- 250 g Pork
- 250 g Beef
- 1 Small onion finely chopped
- 1 Small carrot finely chopped
- 1 Celery stalk finely chopped
- 2 Tablespoons of tomato paste
- 1 Glass of good quality red wine
- Olive oil
- Salt and pepper to taste
- Cloves optional
- Fresh herbs like sage and thyme optional
For the béchamel
- 50 g Butter
- 50 g Flour
- 500 ml Milk may vary according to desired consistency
- Salt and pepper to taste
- Nutmeg optional
For the lasagna
- 250 g Lasagna sheets can be dried or fresh
- Ragù
- Béchamel sauce
- Grated Parmigiano Reggiano cheese
Instructions
For the ragù
- In a pan, sauté the onion, carrot, and celery in olive oil and a little butter.
- Add the pork and beef, sautéing until well browned.
- Incorporate the tomato paste and wine, letting the alcohol evaporate.
- Add water or broth until covered and cook over low heat for 3-4 hours, adjusting salt and pepper.
For the béchamel
- Melt the butter and add the flour, cooking until lightly browned.
- Pour in the milk gradually, stirring constantly to avoid lumps.
- Cook until the béchamel reaches the desired consistency, seasoning with salt, pepper, and nutmeg.
For the lasagna
- Preheat the oven to 180°C.
- In a baking dish, place a layer of béchamel, followed by the lasagna sheets.
- Add a layer of ragù and sprinkle with Parmigiano cheese.
- Repeat the layers until the dish is full, finishing with béchamel and cheese.
- Bake for about 40 minutes or until the lasagna is golden and bubbly.
- Let it rest before serving so it sets properly.
