One of the most famous pasta recipes in the entire world is pasta al pomodoro. Spaghetti with tomato, a favorite among children and one of the easiest to prepare. The only secret is to use good quality tomatoes, fresh or canned, and fresh basil.

Normally, the typical salsa al pomodoro is made with grated tomato, olive oil, basil, and salt. I prefer to make it with whole tomatoes because I don’t like the sauce to be so absolutely homogeneous, but choose how you prefer it. Some also include a little chopped onion, pepper, a bit of cayenne, and, when serving the pasta, they add a little parmesan on top. Everything is delicious, but I have given you the purest and most classic recipe, the super red one.

Ingredients

  • 160 g Spaghetti
  • 350 g Tomato
  • 2 ramitas Fresh basil
  • 1 diente Garlic
  • Extra virgin olive oil
  • Salt

Instructions

  1. Grate or peel the tomatoes
  2. Brown the garlic clove in a pan with 2 tablespoons of extra virgin olive oil
  3. Remove the garlic and add the tomato
  4. Let the sauce reduce for about 15 minutes
  5. Taste and adjust salt if necessary. (If you find it too acidic, you can add a little sugar to balance it)
  6. Turn off the heat, add the basil to the sauce, stir, and leave the pan or pot covered for 10 minutes
  7. Boil the pasta in plenty of salted water
  8. Add the pasta to the sauce when it is almost al dente, along with half a ladle of cooking water
  9. Sauté the pasta for 30 seconds and serve
