Sauce: First step

We start with the sauce, the soul of our recipe. In a pan, we melt the butter and add the chopped anchovies and a little garlic, cooking over low heat until the anchovies melt, creating a rich and aromatic base.

Cooking the pasta

While the sauce is cooking, we put the water on for the pasta. Once the water boils, we add the pasta. The key is not to cook it completely in the water, but to finish cooking it in the pan with the sauce, allowing the pasta to absorb all the flavors.

The special touch

Just before finishing, we add a little fresh ricotta or burrata, which adds an incredible creamy texture to the dish.

Finishing and presentation

To finish, we sprinkle some toasted almonds over the dish, giving it a crunchy touch that perfectly complements the softness of the pasta and the sauce.

Ingredients

  • 180 g linguine or spaghetti
  • 50 g butter
  • 5 anchovy fillets + 2 for garnishing the dish
  • 125 g stracciatella or burrata
  • 1 handful of unsalted toasted almonds
  • Zest of half a lemon
  • Zest of half an orange
  • Chopped parsley
  • Salt
  • Black pepper
  • Virgin olive oil.

Instructions

  1. Bring a large pot of water to a boil for the pasta, adding the appropriate amount of salt.
  2. Dissolve the butter and the previously chopped anchovies in a skillet over very low heat.
  3. Once the butter has melted, turn off the heat and remove.
  4. Boil the pasta until al dente.
  5. Return the skillet to the heat and add the pasta.
  6. Sauté the pasta with the butter and anchovy juices along with half a ladle of pasta cooking water, a little pepper, and chopped parsley.
  7. Plate the pasta.
  8. Place half of the stracciatella or burrata on top of the pasta.
  9. Distribute the lemon and orange zest and the almonds over the top.
  10. Place one anchovy fillet per person on top of the stracciatella.
  11. Add a pinch of pepper, the chopped parsley, and a drizzle of oil.
