Sweet Valentine’s Day temptation with coconut cookie, mascarpone, and strawberry

As a dessert recipe for Valentine’s Day, I propose these towers of coconut cookies, mascarpone cream, and strawberries. They don’t require hard-to-find ingredients and, although it requires making the cookies on one hand and the cream on the other, both steps are extremely simple.

I had been wanting to make coconut pasta frolla for a while because, while snooping around, I had found this recipe. But instead of using it for a crostata, I decided to make these cookies with it, which, with the mascarpone cream and the strawberries, make a great trio. Mascarpone cream usually also incorporates whipped egg whites. Even so, if you need it to be more consistent, without having to complicate your life, it can be done perfectly without them, just as I did, so that it would hold up well inside the tower.

Ingredientes
  • Cookies:
  • 75 g coconut flour
  • 100 g pastry flour
  • 50 g butter
  • 50 g sugar
  • 1 egg
  • 1 pinch of salt
  • Half a lemon
  • 2 tablespoons strawberry jam
  • 75 g red sugar paste
  • Filling:
  • 2 egg yolks
  • 3 tablespoons sugar
  • 250 g mascarpone
  • 100 ml heavy cream for whipping
  • 7 large strawberries
Instrucciones
  1. Quickly knead the butter and flour until they have the consistency of damp sand.
  2. Add the sugar, egg, coconut flour, the pinch of salt, and the grated zest of half a lemon.
  3. Knead until a homogeneous dough is obtained.
  4. Form a ball with the dough, wrap it in plastic wrap, and leave it in the fridge for half an hour.
  5. Preheat the oven to 180 degrees.
  6. Flatten the dough with a rolling pin until it is 1 cm high.
  7. Cut out the hearts with a mold.
  8. Bake for 10 min at 180 degrees.
  9. Let the cookies cool.
  10. Whip the cream and set it aside in the fridge.
  11. Beat the egg yolks with the sugar until a light and fluffy cream is obtained.
  12. Add the mascarpone and beat until the egg and cheese are well combined.
  13. Fold the whipped cream and the mascarpone cream together with a spatula, using delicate bottom-to-top movements.
  14. Flatten the sugar paste and, with the same cookie mold, form as many hearts as you want to make towers, since they will only cover the top cookie of each tower.
  15. Join the cookie with the sugar paste, using a little jam as glue.
  16. Cut the large strawberries into half-cm slices.
  17. Assemble the towers: First a cookie, cover with a slice or two of strawberry and a little cream.
  18. Repeat the operation and cover the tower with the cookie covered with the red sugar paste.
