How to prepare the multicolor caprese salad
Choose and cut the tomatoes
Wash the tomatoes well; cut the larger ones into thick slices and leave the cherry tomatoes in halves to add texture and color.
Arrange the base of the salad
Arrange the large slices as the base of the plate and distribute the small tomatoes on top to create height and visual contrast.
Add the mozzarella
Tear the mozzarella with your hands so it releases its creamy whey and place the pieces irregularly over the tomatoes.
Express basil pesto
Blend the basil, half of the oil, a pinch of salt, and an ice cube until you get a bright green pesto that doesn’t darken.
Dress and serve

- 250 g assorted tomatoes
- 125 g buffalo mozzarella

- Wash and dry the tomatoes; cut the large ones into 0.5 cm slices and halve the cherry tomatoes
- Arrange the large slices as a base on a flat plate, season lightly with salt and pepper
- Add the small tomatoes over the base, alternating colors to create volume and contrast
- Drain the mozzarella, bring it to room temperature, tear into irregular pieces and distribute over the tomatoes
- Blend basil leaves, 15 ml of oil, a pinch of salt, and an ice cube until you get a green and fluid pesto
- Drizzle the tomatoes with the remaining oil and spray a few drops of balsamic vinegar only over the tomatoes
- Top with teaspoons of express pesto, garnish with fresh basil leaves and serve immediately
