Last Sunday I made this typical Modena cake, filled with walnuts, honey, and rum for a family celebration, and it was a total success. This summer I went to Bologna and bought a book of typical recipes from Emilia Romagna, which is very good: La Grande Cucina Regionale Italiana: Emilia Romagna by Daniela Guaiti. I hadn’t prepared any of the recipes from the dessert section yet, and I finally chose this Modenese Torta Bonissima. I had never tried it either, even though I passed through Modena a couple of years ago, but it looked so good and the recipe was so simple that I thought, why not?

Torta Bonissima with walnuts, honey, and rum

Ingredientes
- 500 g pastry flour
- 300 g butter
- 200 g sugar
- 4 egg yolks
- 1 and a half lemons.
- 250 g shelled walnuts
- 250 g honey
- A small glass of rum
- 250 g dark chocolate for melting
- Salt
Instrucciones
- Knead the flour and the butter cut into small cubes.
- When it has a consistency similar to sand, add the sugar, egg yolks, the zest of one lemon, and a pinch of salt.
- When the dough is homogeneous, form a ball, wrap it in plastic wrap, and leave it in the fridge for half an hour.
- Meanwhile, chop the walnuts a little. Only a little, they should remain in small pieces, not like flour.
- Mix the walnuts with the honey, the small glass of rum, and the zest of half a lemon.
- Divide the dough into two parts. One with 2/5 of the dough, the other with 3/5, since the one that will cover the base of the mold, inside which the filling will go, must be larger.
- Preheat the oven to 180 degrees.
- Flatten the two parts of the dough, forming a couple of discs.
- Grease the cake mold or tin with a little butter.
- Line the inside of the mold with the large disc of dough.
- Fill with the walnut paste.
- Cover with the small disc and trim, if necessary, the excess dough and seal the cake well.
- Bake the cake for 30 min at 180 degrees.
- When it is ready, if you wish, you can cover it with dark chocolate, which can be melted in a bowl in the microwave or in a double boiler.
