  • 2 or 3 anchovy fillets
  • Fresh celery, basil, and lemon
  • Extra virgin olive oil, salt, and black pepper

How to prepare the tomato bruschetta step by step

Prepare the fresh dressing

Start by cutting the cherry tomatoes and the watermelon into small cubes. Place them in a bowl and add a good drizzle of extra virgin olive oil, a pinch of salt, black pepper, chopped basil leaves, and a little lemon zest. Mix well and let the ingredients rest for 20 to 30 minutes. This will allow the flavors to integrate perfectly.

Make the savory cream

While the previous mixture is macerating, take the anchovy fillets and chop them very finely. In a separate container, combine the mascarpone (or ricotta if you prefer something lighter) with the anchovies, half a teaspoon of extra virgin olive oil, the zest of a quarter of a lemon, a few drops of its juice, and black pepper. Stir until you get a homogeneous cream and keep it in the fridge.

Drain and add the crunchy touch

After the resting time, it is essential to pass the tomato and fruit mixture through a strainer for a couple of minutes. This will remove excess liquid. Then, incorporate the tender celery leaves or its heart chopped into a very fine brunoise and mix gently.

Assemble and garnish

Toast the sourdough bread slices until they are golden brown and crispy. Spread a generous layer of the cold cream over the hot surface of the bread. Distribute the colorful red mixture on top and finish with a drizzle of extra virgin olive oil, freshly ground pepper, and a few fresh basil leaves.
