How to prepare the pasta with salmon and burrata
Prepare the creamy vegetable base
First, cut the leek and fennel very thinly. In a pan, put the butter together with a drizzle of olive oil; this is a fundamental little trick so that the butter provides all its flavor without burning. Add the vegetables with a pinch of salt and let them poach little by little. If you see they need it, add a tiny bit of water so they stay nice and soft and don’t brown too much.
The secret of the sauce: the touch of burrata

If you can use fresh egg tagliolini, the dish will gain many points. If not, some good durum wheat spaghettini also work wonderfully to hold this very special sauce. Also, if you have any leftover fennel, you can use it for a fresh salad as a side dish.

Ingredients
