  • 160 g sausage
  • 30 g Grana Padano or Parmesan grated
  • 1/2 leek finely chopped
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • 4 sage leaves
  • 1 handful of toasted almonds lightly chopped (optional)
  • 1 splash of dry white wine
  • Extra virgin olive oil
  • Salt to taste
  • A pinch of cayenne or black pepper (optional, if not for children)

Step-by-step preparation of the recipe

To start, peel and cut the pumpkin into small cubes. The leek, finely chopped, will provide a mild flavor without standing out too much. Form mini meatballs with the sausage; this is a fun step where children can participate and enjoy.

In a large pan, heat a splash of extra virgin olive oil and brown the mini sausage meatballs until they are well seared on all sides. Once ready, remove them and set them aside for later.

Ingredients

  • 200 g pumpkin
  • 160 g pasta
  • 160 g sausage

Instructions

  1. Peel and dice the pumpkin.
  2. Finely chop the leek.
  3. Form mini meatballs with the sausage.
  4. Heat a splash of olive oil in a skillet and brown the meatballs.
  5. Remove the meatballs and set aside.
  6. In the same skillet, without removing or washing the oil from the meatballs, poach the leek at a moderate temperature and add a little water if necessary to prevent it from burning.
  7. Add the pumpkin, a little salt, the herbs, and the pepper or cayenne, if you are using it.
  8. Once the pumpkin is slightly browned, add a splash of white wine to deglaze.
  9. Put the water for the pasta on the heat.
  10. When the pumpkin is tender, mash a third of it and add a little pasta cooking water and stir, so that a bit of cream forms, along with the rest of the diced pieces.
  11. Add the meatballs and stir.
  12. Cook the pasta until it is one minute away from being al dente.
  13. Add the pasta to the skillet and sauté all the ingredients together, along with half a ladle of pasta cooking water.
  14. When it is al dente, remove from the heat, add the cheese, and sauté so that everything mixes well.
  15. Serve with a few almonds on top.
