How to prepare the four-cheese risotto

Toast the rice and sauté with wine

In a saucepan, heat the rice over medium-high heat without adding fat, stirring constantly. This step helps to seal the grain and enhance its flavor. Then pour in the dry white wine and let the alcohol evaporate, stirring so the rice absorbs it well.

Cook with broth

Add the hot broth little by little, stirring periodically. Do not add more broth until the rice has absorbed the previous amount. Continue this process for 15-18 minutes, until the grain is al dente and creamy.

Incorporate the cheeses

When the rice is almost ready, remove the saucepan from the heat and add the gorgonzola, stracchino, scamorza, and grated parmesan. Stir vigorously until the cheeses are integrated. Add the very cold butter (even better if it is frozen) and perform a light “mantecatura” to give it that velvety texture. Adjust salt if necessary.

Final presentation

  3. Cook with broth. Add the hot broth little by little, one ladle at a time, stirring regularly, though constant stirring is not necessary. Do not add more until the rice has absorbed the previous amount. Continue this process for 15-18 minutes, until the rice is al dente and creamy.
  4. Add the cheeses. Remove from the heat and add the gorgonzola, stracchino, scamorza, and parmesan. Stir vigorously until the cheeses melt and the risotto becomes very creamy. Add the butter, fresh from the freezer, and toss with the rice for extra creaminess.
  5. Serve with an elegant finish. Serve the risotto on the plate and let it settle without handling it too much. Garnish with chopped pistachios, a few fresh marjoram leaves, and parmesan shavings. A touch of freshly ground black pepper will further enhance the flavor.

  • Broth adjustment: The rice may absorb more or less broth depending on the variety and the heat, so keep a little extra on hand just in case.
