Carnival sweets: Frittelle di mela (apple fritters)

Today I propose a very popular carnival recipe from Italian lands: Apple Fritelle: Apple slices, battered with a dough with a flavor similar to that of wind fritters. As you can see, it is a very simple and very economical recipe, but the apple-cinnamon duo needs almost nothing else to succeed.

Last year I already told you a little bit in this article about carnival in Rome and some of the traditional sweets with which they celebrate the beginning of Lent. This year I wanted to post the recipe for castagnole, but since they are basically the same as our Lenten fritters, in a simple version, I thought you would probably like something a little more “exotic”, even if it is still a fried sweet, made with ingredients that anyone has very close at hand.

Ingredientes
  • 2 golden apples
  • 80 g flour
  • 100 ml milk
  • 1 egg
  • Half a lemon
  • Sugar
  • Lots of cinnamon
  • Peanut or sunflower oil
Instrucciones
  1. Separate the egg white from the yolk.
  2. Whisk the flour, yolk, and milk all together until a homogeneous dough is obtained.
  3. Let the dough rest in the fridge for half an hour.
  4. Peel the apples, remove the seeds and the hard central part, and cut them into slices of approx. one cm each.
  5. Bathe the apples with the juice of half a lemon and sprinkle a little sugar on top.
  6. Beat the egg white until stiff and gently incorporate it into the dough that was in the fridge.
  7. Dip the apple slices in the dough and fry in abundant oil.
  8. Let the fritelle rest on a couple of sheets of paper towels so they lose the excess oil.
  9. Put a little sugar and ground cinnamon on top of the fritelle.
