- 160 g linguine or long pasta
- 250 g whole shrimp
- 1 medium zucchini
- ½ small onion
- 1 garlic clove
- 10–12 saffron threads
- 3 sprigs of fresh marjoram (or thyme/oregano)
- 1 small cayenne pepper (optional)
- Extra virgin olive oil
- Salt and black pepper to taste

How to prepare Zucchini and shrimp pasta with saffron
1. Clean and set aside the shrimp
Remove the eyes from the shrimp heads and, with a longitudinal incision on the back, extract the vein. Set aside three whole shrimp for garnish and cut the rest into 3–4 pieces each.
2. Toast heads and shells for the bisque
In a small pot, heat olive oil and add all the cleaned heads and shells. Toast them over medium heat, crushing them a little so they release their juices. Salt lightly, cover with water, and cook for 20–25 minutes. Strain and keep the broth hot.
3. Poach onion, garlic, and zucchini
In a large pan with a drizzle of oil, sauté the chopped onion and garlic until the onion is translucent. Add the sliced zucchini and a pinch of salt. Sauté for 2–3 minutes until tender.
4. Infuse the saffron and add marjoram
Place a few saffron threads in a small bowl and pour in a little hot bisque to hydrate them and extract color. Then, pour that mixture over the vegetables without letting it boil. Stir and let it rest for 2 minutes off the heat. Incorporate the fresh marjoram and, if you wish, a touch of cayenne.
5. Cook the pasta and perform the “mantecatura”
Boil the pasta in plenty of salted water until 2–3 minutes before the al dente point. Drain it, reserving a little cooking water. Transfer the pasta to the pan with the bisque and vegetable mixture, add the chopped shrimp, a drizzle of the reserved water, and stir over low heat for 1 minute to bind the sauce.
6. Sauté the whole shrimp
In another pan, heat a thread of oil and sauté the reserved whole shrimp with a pinch of salt, turning them for 1 minute. Set aside.
7. Plating and final touch
Turn off the heat of the main pan, add a drizzle of extra virgin olive oil and a final pinch of marjoram. Serve the pasta on hot plates, place the whole shrimp on top, and garnish with the fresh marjoram leaves. Enjoy!

Only heads and shells for the bisque
Toast the heads and shells without adding vegetables to achieve a crystal-clear broth with a very concentrated flavor.
Thinly sliced zucchini
Cutting the zucchini into slices maintains its juiciness and provides a pleasant texture without the need to peel or remove seeds.
Express saffron hydration
Put the threads in a bowl with a little hot bisque before incorporating them; this way, they release color and aroma instantly.
Mantecatura directly in the pan
Drain the pasta almost al dente and finish it in the pan with the broth and vegetables to bind the sauce with the residual starch.
Shrimp at the end and quick turn
Sauté the whole shrimp only at the end, turning them quickly, so they remain juicy and retain all their flavor.

Zucchini and shrimp pasta with saffron fuses linguine, shrimp, and zucchini in a liquid gold of saffron.
Ingredients
- 160 g linguine or long pasta
- 250 g whole shrimp
- 1 medium zucchini

- 1 garlic clove
- 10-12 saffron threads
- 3 fresh marjoram sprigs
- 1 small cayenne pepper optional
- Extra virgin olive oil
- Salt
- Black pepper
Instructions
- Remove the eyes and digestive tract from the shrimp and set aside three whole ones for garnish
- Toast the heads and shells in olive oil and cook with water for 20–25 minutes; strain and reserve the bisque
- Poach the chopped onion and garlic in a pan with oil until the onion is translucent
- Add the thinly sliced zucchini and sauté for 2–3 minutes
- Place the saffron threads in a bowl and pour in a little hot bisque to hydrate them
- Incorporate the saffron and bisque mixture into the vegetables and remove from heat after 2 minutes; add marjoram and cayenne
- Cook the pasta until al dente, drain, and reserve a little of the cooking water
- Add the pasta, the chopped shrimp, and a splash of the reserved water to the pan; stir for 1 minute to bind the sauce
- Sauté the reserved whole shrimp for 1 minute in another pan with oil
- Turn off the heat, add a drizzle of raw oil and a pinch of fresh marjoram
- Plate by placing the whole shrimp on top and garnish with fresh marjoram leaves
