For today’s recipe, you only really need a few cherry tomatoes, a tin of anchovies, and breadcrumbs, ingredients that can be found even in the most minimalist supermarket anywhere. I found it on Giallo Zafferano while looking for a pasta recipe with cherry tomatoes that I didn’t already know, and although I modified the proportions a bit because I thought it was a little bland, I have to admit it’s a great invention.
It is one of the many variations that exist of the well-known pasta with anchovies and breadcrumbs, typical of Sicily, and the truth is that the confit tomatoes give it a sweet, caramelized touch that makes it a bit more complex and attractive. Yes, it takes an hour and a half to confit the tomatoes, but the oven does that. You’ll see how easy it is, and if for some reason you feel lazy about boiling the pasta later, they can be used in other ways, such as in a salad, on toast with a little cheese or the anchovies themselves, or simply to snack on as an appetizer.

The card

- 320 g de Linguine (o cualquier otra pasta larga)
- 450 g tomates cherry / o de pera mini, maduros.
- 4 filetes de anchoa en conserva
- 3 cucharadas de pan rallado
- 1 ramita de romero
- 1 cucharadita de orégano
- 2 cucharadas de azúcar
- 3 hojas de albahaca + un poco más para decorar
- 1 diente de ajo
- Pimienta negra
- Sal
- Aceite de oliva virgen
- Lavar y cortar los tomates por la mitad.
- Cubrir la bandeja plana del horno con papel de horno.
- Repartir los tomates sobre la bandeja, (la parte con piel apoyada sobre la bandeja, la cara abierta del tomate hacia fuera).
- Salpimentar y repartir el azúcar por encima de los tomates.
- Picar el ajo y el romero y repartirlo por encima de los tomates.
- Repartir el orégano por encima de de los tomates.
- Aliñar todos los tomates con un poco de aceite.
- Hornear los tomatitos una hora y media a 150 grados.
- Ya se puede poner a hervir el agua para la pasta.
- Poner al fuego una sartén lo suficientemente grande, como para saltear después la pasta en ella.
- Poner un poco de aceite y freir los filetes de anchoa hasta que deshagan.
- Una vez los filetes de anchoa se hayan deshecho, incorporar el pan rallado y dejar que se tueste un poco.
- Añadir la pasta casi al dente y un cucharón de agua de cocción en la sartén y saltear, hasta que la pasta haya absorbido el agua.
- Parar el fuego y añadir los tomates y 3 hojas de albahaca a la pasta.
- Mezclar bien y ya se puede servir la pasta.
