It has a delicate, slightly spicy, and very creamy flavor. I love enjoying it simply with a good piece of crusty toasted bread, as the heat of the bread brings out its aromas spectacularly.

The Culatello di Zibello: the undisputed king

Next, we move on to culatello di zibello, considered the king of cured meats by many Italians. It is made exclusively with the noblest part of the pig’s leg and comes from the Zibello area, very close to Parma. It is an elegant, aromatic, and extremely delicate product, with a more refined and less salty flavor than most traditional cured hams. To appreciate it as it deserves, enjoy it with almost no accompaniments: a little good soft bread and a touch of quality butter is enough.

The Capocollo di Martina Franca: the treasure of Apulia

Finally, we discover the capocollo from Martina Franca, a true treasure of the Puglia region. It is obtained from the neck and the upper part of the pork shoulder.
