How to prepare the Palermitan-style chicken sandwich

Marinate the Sicilian-style fennel salad

Start by preparing the fresh touch of the dish. Thinly slice the fennel and place it in a bowl. Add the orange zest and juice, a little salt, and Sherry vinegar. Mix everything very well and let it marinate for half an hour. This resting time will soften the fennel and enhance its citrus aromas.

Prepare the Palermitan-style breaded chicken

Place the chicken thigh between sheets of parchment paper. Give it a few gentle taps to tenderize and flatten it, ensuring even cooking. Prepare the breading by mixing the breadcrumbs (or panko) with the finely minced garlic, fresh parsley, the mixture of grated cheeses, and the lemon zest. Salt the chicken, coat it generously with olive oil, and press it onto the breadcrumb mixture so the coating adheres perfectly.

Sauté the mushrooms and pumpkin

In a pan with a drizzle of olive oil and some garlic shoots, brown the cleaned and sliced mushrooms without stirring them too much. Remove them from the heat, add butter, a little salt, fresh parsley, and set aside. In that same pan, with a little more oil, butter, and fresh sage, cook the sliced pumpkin with a tiny bit of water, salt, and pepper. They should be very soft and golden; add more water if necessary.

Toast the bread and fry the meat

To take advantage of all the juices, toast the bread in the same pan where you cooked the vegetables, adding more butter, olive oil, and fresh sage. Once well browned on both sides, remove it. Lightly wash the pan and fry the chicken in olive oil over medium heat. Turn it over little by little and, while it finishes cooking, place the Mahón cheese on top. You can cover the pan for a moment so it melts perfectly.

Assemble your gourmet creation

Dress some escarole leaves with salt, oil, and well-mixed Sherry vinegar. On the base slice of toasted bread, place a bed of escarole, add the marinated fennel, the tender pumpkin, the crispy meat cut in two with its melted cheese, and top with the sautéed mushrooms. Cover with the other slice and get ready to enjoy.

Tips and advice for a perfect result

The secret of the Palermitan breading

The key to an extra-crispy coating is to skip the egg and coat the meat directly with olive oil. Additionally, the combination of aged cheese and lemon zest in the breadcrumbs makes a spectacular difference on the palate.

Use the juices for the bread

Toasting the bread in the same pan where you sautéed the pumpkin and mushrooms, incorporating butter and sage, transfers incredible rustic aromas to the crumb and leaves an irresistible golden crust.

The cut of the meat

Using boneless chicken thigh flattened by pounding ensures the interior remains extremely juicy, perfectly holding up to the contrast of textures with the breading and the rustic bread.

Frequently Asked Questions

Can I use chicken breast to prepare the Palermitan-style chicken sandwich?

Yes, you can use breast if you prefer, although the boneless thigh is much juicier and tastier, absorbing the nuances of pan-cooking better.

What exactly is Palermitan-style breading?

It is a traditional Sicilian technique where meat or fish is breaded without using egg, adhering the breadcrumbs only with olive oil and enriching it with aged cheese, garlic, parsley, and citrus.

What can I substitute for Mahón cheese?

If you cannot find Mahón cheese, you can use a young provolone, a havarti cheese, or a mild cheddar that melts well and provides a creamy texture to the bite.

Can I make the recipe lighter by baking the meat?

Of course. You can bake it at 200 degrees for about 20 minutes, spraying it with a little oil, until it is golden and very crispy.

What type of mushrooms do you recommend using?

Any fresh seasonal mushroom will work wonderfully. Portobello mushrooms, king oyster mushrooms, or porcini add a fantastic rustic flavor.
