Express meat cannelloni - tricks for a great dish with almost no cooking

If you have ever wanted to enjoy an authentic Sunday feast without having to spend hours in front of the stove, you are in the right place. We all love comfort food, but the current pace of life often leaves us without the energy to cook complex dishes. This is where the magic of smart culinary shortcuts comes into play.

Today I bring you the secret to preparing express meat cannelloni: tricks for a great dish with almost no cooking, using strategic elements that you can find in any supermarket. The main idea is to “assemble” instead of stew, taking advantage of good quality pre-prepared ingredients, such as some good meatballs and a thick bechamel, to create a dish that looks like it has been in the oven for hours.

The big obstacle with stuffed pasta is usually the pre-cooking, but by using dry pasta tubes and an extra-hydrated filling based on meat and ricotta, the oven will do all the hard work for us. Let’s discover how this genius dish is made!

How to prepare express meat cannelloni

Prepare and soften the meat

Start by preheating your oven to 200 degrees. Take the meatballs out of their packaging and give them a quick blast in the microwave. This step is not to cook them, but to soften them so it is much easier to mash them and integrate them in the next step.

Create the extra-hydrated filling

In a large bowl, crumble the warm meatballs and mix them with the ricotta. Here comes the fundamental trick: this filling needs much more hydration than normal, since the raw pasta will absorb liquid during cooking. Season with a little salt, black pepper, and a pinch of nutmeg (don’t overdo it). Mix everything very well.

Fill the pasta easily

To keep things simple, put the mixture into a piping bag or a clean plastic bag with the tip cut off. Fill each pasta tube generously. It is important that they are well filled because the pasta will expand slightly in the oven as it gains moisture.

Assemble the dish with plenty of bechamel

Cover the bottom of a baking dish with a very generous layer of bechamel. Place the filled tubes side by side. Then, cover them completely with the rest of the bechamel. Don’t be stingy; if the pasta is not well covered, it will remain hard.

The final touch and baking

Sprinkle a generous amount of Grana Padano cheese over the entire surface and distribute a few small pieces of butter to create a crispy and irresistible crust. Bake at 200 degrees for about 25 minutes, or the exact time indicated on your pasta box.

Serve and enjoy

Once golden and bubbling, take the dish out of the oven. The best advice here is to let them rest for a few minutes before serving; this way the juices settle and you won’t burn yourself when tasting them. You’ll see how this wonder passes for a traditional recipe that takes hours of work!

Tricks and tips for a perfect result

The importance of hydration

Since we use tubes that do not require pre-cooking, liquid is your best ally. Make sure that both the filling and the sauce topping are very abundant so that the pasta cooks to perfection.

Careful with the nutmeg

This spice is very potent and classic in Italian gastronomy, but in excess, it can ruin the dish. A very light grating is enough to enhance the flavors of the meat and cheese.

Resting is gold

Although the aroma invites you to devour them immediately, letting the dish rest after coming out of the oven will make the portions cut cleanly and the texture will be ideal.

Frequently Asked Questions

Can I use another type of cheese instead of ricotta?

Yes, if you can’t find ricotta, you can use traditional cream cheese, although the texture will be a bit denser and less authentic.

What do I do if I don’t have a piping bag?

You can use a clean freezer bag by cutting off one of the bottom corners. You can also fill them patiently with a small teaspoon.

Can these cannelloni be frozen?

Of course! You can assemble them in the dish and freeze them before baking, or freeze the leftover portions once cooked.

Why are the meatballs heated before mixing them?

By giving them a quick blast in the microwave, the internal fat softens slightly, which greatly facilitates the process of mashing and integrating them.

Is it mandatory to use no-boil pasta tubes?

It is not mandatory, but it is the core of this time-saving trick. If you use traditional sheets, you will have to pre-cook them following the manufacturer’s instructions.
