How to prepare the confit leeks with savory sabayon
Clean and cut the leeks
Start by removing the tougher green part of the leeks. A very useful trick is to use those scraps to make a simple broth that we will use later. Cut the white part into three cylinders of equal size and then cut them in half lengthwise. It is essential to wash them well at this point, as dirt often hides between the central layers and we don’t want any unpleasant surprises when eating.
Sear and caramelize in the pan
In a pan with a good drizzle of olive oil, place the leeks to sear them. The goal here is to achieve caramelization. To brown them evenly, press them lightly against the bottom of the pan from time to time. Once they have that appetizing toasted color, turn them over, add a pinch of salt, and pour in a little leek or vegetable broth. Cover the pan and let them poach over low heat until they are very tender.
Prepare the savory sabayon in a bain-marie
While the leeks finish cooking, let’s move on to the soul of the dish: the savory sabayon. In a bowl over a bain-marie, place the egg yolks and butter. Start whisking vigorously while adding a pinch of salt and the white wine. Continue whisking until the mixture acquires a dense and airy texture, very similar to that of a mayonnaise. If you want a more professional finish, you can transfer the sabayon to a piping bag, although serving it with a spoon also looks great.
The final touch: hazelnuts and assembly
For the contrast of textures, chop the toasted hazelnuts irregularly with a knife. Place the confit leeks on the plate, cover them generously with the savory sabayon, and finish by decorating with the hazelnuts, a little freshly ground black pepper, and a few marjoram leaves to add freshness.

The importance of pressure
When searing the leeks, don’t be afraid to press them against the pan. That direct contact is what generates the natural sugars that give the toasted and sweet flavor so characteristic of this recipe.
Control the bain-marie temperature
For the sabayon, make sure the water in the bain-marie does not boil vigorously and that the bowl does not touch the water directly. We want the heat to be gentle so that the yolks emulsify without curdling.
Total utilization
Never throw away the green part of the leek. Wash it well and freeze it or use it directly for vegetable broths; it provides a much deeper flavor than any concentrated bouillon cube.
