How to prepare the faux pumpkin risotto for Halloween

Toast the pasta dry

Put a saucepan on the heat and, when it is hot, add the pasta directly.
Stir for a few seconds until it starts to brown slightly: that toasted touch is what will give it that very special flavor. A trick that never fails and makes the difference.

Hydrate little by little like a classic risotto

Add a little of the hot vegetable or chicken broth and stir gently.
When the pasta absorbs it, continue adding more broth, little by little, to achieve a creamy texture.

Add the pumpkin puree, pork rinds, and hazelnuts

When the pasta is almost ready, add the pumpkin puree and mix well.
Chop the pork rinds and the toasted hazelnuts and add them: they provide texture, a salty touch, and that crunchy contrast that makes every bite different.
If you like, add a little fresh thyme to give it aroma.

Cream with very cold butter and Parmesan

Turn off the heat, add the very cold butter and a little grated Parmesan.
Stir vigorously, as is done in an authentic risotto: this final mantecatura is what makes the faux risotto shiny, creamy, and full of flavor.

Ingredients

  • 160 g small pasta shapes like orzo or pastina
  • 400 ml vegetable or chicken broth
  • 200 ml pumpkin puree
  • 20 g butter
  • grated Parmesan
  • 8 toasted hazelnuts
  • 4 pork cracklings
  • black pepper
  • a little bit of fresh thyme or rosemary
  • orange zest

Instructions

  1. Heat the broth in a saucepan and keep it over low heat.
  2. In another dry saucepan, lightly toast the pasta until it turns a golden color.
  3. Add a little hot broth and stir.
  4. Continue adding broth little by little, as if it were a risotto, until the pasta is creamy and al dente.
  5. Incorporate the pumpkin puree and mix well.
  6. Chop the hazelnuts and pork cracklings, add them to the saucepan along with a little fresh thyme.
  7. Turn off the heat, add the very cold butter and the grated Parmesan, and stir to emulsify.
  8. Finish with black pepper and orange zest.
  9. Serve hot and enjoy this creamy and aromatic fake risotto
