How to prepare the braised cabbage with flavors from southern Italy

Sauté the onion and garlic

In a saucepan, heat a generous drizzle of extra virgin olive oil. Add the onion cut into medium pieces and the garlic (you can leave it with the skin on). Sauté over low heat with a pinch of salt until the onion is tender and slightly golden.

Add the cabbage and let it release its juice

Meanwhile, prepare the cabbage: remove the tougher leaves, cut out the central core, and slice it into thin strips. When the onion begins to caramelize, add the cabbage with a little more salt and stir well. Cover the saucepan and let it release its own water over low heat for a couple of minutes.

Incorporate the tomatoes and seasonings

Cut the tomatoes into quarters and add them to the saucepan along with the bay leaf and the chili pepper (to taste). Stir and cover again. Cook over very low heat for 30-35 minutes, checking every 7-10 minutes. If you notice it drying out too much, you can add a little water.

Ingredients

  • 1/2 medium cabbage
  • 1 garlic clove
  • 1 medium onion
  • 3 ripe tomatoes
  • 1 bay leaf
  • Cayenne pepper optional
  • Salt

Instructions

  1. Sauté the onion and garlic. In a saucepan, heat a generous splash of olive oil. Add the onion cut into medium pieces and the whole garlic (you can leave it with the skin on). Sauté over low heat with a pinch of salt until the onion is tender and golden.
  2. Add the cabbage and let it release its juices. Clean the cabbage by removing the toughest leaves and cutting off the stem. Then, cut it into thin strips. When the onion is caramelized, add the cabbage with a little more salt and stir. Cover and let it release its water over low heat for a few minutes.
  3. Incorporate the tomatoes and seasonings. Cut the tomatoes into quarters and add them to the saucepan along with the bay leaf and the cayenne (optional). Stir, cover, and let it braise over low heat for 30-35 minutes, checking every 7-10 minutes. If it gets dry, add a little water.
  4. Choose your version: with toasted bread or with pasta. Light version: Serve it with toasted bread. You can use bread with nuts or thin slices of toasted stale bread.
  5. Pasta version: Cook 40 g of whole wheat pasta in salted water, drain it, and mix it with the cabbage in the saucepan. If necessary, add a little of the cooking water.
  6. Serve and enjoy. Serve hot with a drizzle of extra virgin olive oil on top. For the pasta version, you can add a pinch of grated cheese.
