First, thoroughly check each piece. If you notice they have adhesions or dirt on the shell, scrub them under a stream of cold water using a clean scouring pad. Next, pull firmly on the byssus (the side beard) towards the base to extract it. It is essential to discard any specimen that has a broken shell or that, while open, does not close when given a gentle tap.
Quick cooking over high heat
Heat up a wide, empty pot or pan. When it reaches a good temperature, add the seafood and instantly add a very generous amount of freshly ground black pepper. Immediately after, cover the container. The intense heat and the liquid they contain will create the perfect steam.
The golden trick: remove them one by one
While they cook, shake the covered pot a little. As you see the shells opening, you must act quickly: remove them one by one with tongs and set them aside in a deep plate. However, if you let them all stay on the heat until the last one opens, the first ones will overcook, losing their size and juiciness. Those that resist opening at the end, throw them away directly.
