There are bites that taste like summer and music in the square. The Zingara ischitana was born in a pub in Ischia in the late 70s, in the midst of the hippie era. Its name, which in Italian means “gypsy”, evokes freedom and a desire to travel, and well defines the spirit of this crispy panini made with rustic bread, fiordilatte, tomato, mayonnaise, lettuce, and prosciutto. It soon became an island classic, prepared in bars and beach clubs in Ischia with their own versions: from the popular Porto 51 to beach spots like Bar Gino. The essential, however, remains the same: a golden grilled sandwich that tastes like Mediterranean summer and recent tradition turned into an icon.

- 2 thick slices of rustic bread (pan cafone type)
- 120 g of fiordilatte (well drained)
- 2-3 slices of tomato (oxheart type)
- 2 lettuce leaves (Iceberg or similar)
- 2-3 slices of prosciutto
- 1 tbsp of mayonnaise
- Fresh basil leaves
- Extra virgin olive oil
- Salt and pepper

How to prepare the Zingara ischitana
Toast the bread (only on one side)
Lightly brush the slices with oil on both sides and toast on the grill only on one side. The contrast between the crispy side and the soft side is key.
Drain the fiordilatte well
Drain the fiordilatte and dry it with paper so it doesn’t soak the bread. Season the tomato with a pinch of salt.
Assemble and press the sandwich
On the untoasted side, spread mayonnaise, add tomato, fiordilatte, and torn basil leaves. Close and press on the grill for 1-2 minutes: the cheese will warm up without overflowing.
Add the crunch at the end
Open slightly, add the lettuce, a little more mayonnaise, and the prosciutto. Close again: this way the lettuce doesn’t wilt and the ham doesn’t dry out.
Cut and serve
Cut in half and serve hot, with the crispy bread and creamy interior. Perfect for on-the-go.

Add them after pressing: they stay crispy and with a good touch of salt.
Well-drained fiordilatte
Less water, more creaminess. If you can, cut it and let it drain for a few minutes.
Torn basil, not chopped
Breaking the leaves with your hands prevents oxidation and releases its aroma better.
