- 1 piece of pumpkin

- 150 g of pre-cooked beans
- 80 g of small tube-type pasta

Step-by-Step Preparation of Minestrone Soup
Prepare the aromatic base
In a large pot, heat a drizzle of olive oil. Sauté the chopped onion, carrot, celery, and garlic for about 5 minutes. Add a pinch of salt to enhance the flavors.
Add the vegetables that take longer to cook
Incorporate the potatoes and pumpkin in small cubes. Stir and cook for 10 minutes, making sure they don’t stick.
Add the rest of the vegetables and the water
Add the chard stems, the green beans, and enough water to cover the ingredients. Place the bay leaf and adjust the salt. Let it simmer over low heat.
Incorporate the pasta and the chard leaves
When the potatoes are almost cooked, add the pasta and the chard leaves. Cook until the pasta is al dente.
Serve and garnish
Remove from heat and let it rest for a few minutes. Serve hot and, if you prefer, add grated Parmesan cheese, a touch of pepper, and a drizzle of extra virgin olive oil.
