Mascarpone, chocolate and coconut truffles, a super easy dessert that requires no baking. Many of you have already returned from vacation, but the kids still have a few weeks left before school starts. If you have run out of ideas to keep them entertained for a while, encourage them to prepare this recipe, for which you will only have to help them with the first step, melting the chocolate.
I found this recipe a while ago and it works wonders for when you don’t feel like making tiramisu, but you have mascarpone about to expire. I like to add a splash of rum, but if you don’t like it or the little ones are going to eat them, they are just as delicious without alcohol. I found the recipe a while ago on this page and, if you don’t like coconut, they can be coated with almond, pistachio, or any chopped nut.
- 200 g of melting chocolate
- 100 g of mascarpone cheese
- 80 g of shredded coconut
- 1 splash of rum (optional)
- Melt the chocolate in a bain-marie or in the microwave.
- Mix the mascarpone cheese with the chocolate.
- Add a splash of rum to the mascarpone and chocolate paste.
- Cover the bowl with plastic wrap and let it cool in the fridge for an hour and a half or until the paste is hard enough to work with.
- Form small balls.
- Roll the balls in the shredded coconut so they are coated in coconut.
