Escurre sobre papel. Versi\u00f3n ligera: hornea 15 min a 200 \u00b0C con un chorrito de aceite.<\/p>\n<h4><strong>4. Monta las capas de berenjenas a la parmesana<\/strong><\/h4>\n<p>En una fuente, extiende una cucharada de salsa, cubre con berenjena, mozzarella escurrida, parmesano y m\u00e1s salsa. Repite tres capas y termina con parmesano.<\/p>\n<h4><strong>5. Hornea y deja reposar<\/strong><\/h4>\n<p>Hornea 20 min tapado a 190 \u00b0C, destapa y gratina 15 min hasta que burbujee. Apaga el horno y deja reposar 30 min. Mejor a\u00fan: recalienta al d\u00eda siguiente, el sabor se multiplica.<\/p>\n<hr \/>\n<h3><strong>Trucos y consejos para un resultado perfecto<\/strong><\/h3>\n<h4><strong>Controla la humedad de mozzarella y berenjena<\/strong><\/h4>\n<p>Escurre la mozzarella en un colador al menos 30 min. Salpica las berenjenas, d\u00e9jalas \u201csudar\u201d 1 h, enju\u00e1galas y s\u00e9calas con papel y pa\u00f1o: as\u00ed evitar\u00e1s capas aguadas y frituras explosivas.<\/p>\n<h4><strong>Harina fina y fritura a 180 \u00b0C<\/strong><\/h4>\n<p>Reboza las rodajas en una capa ligera de harina, como hac\u00edan \u201cle nonne\u201d, y retira el exceso con golpecitos.
