Existen diferentes variantes: con <strong>salm\u00f3n fresco o ahumado<\/strong>; con o sin tomate, etc. De todas las versiones que he probado, <a href=\"http:\/\/www.ricettedellanonna.net\/penne-al-salmone\/\">esta<\/a> es la que m\u00e1s me ha gustado, aunque le he hecho algunos cambios que os comentar\u00e9, y especialmente me ha convencido por el <strong>toque de cognac<\/strong>.<\/p>\n<p>El salm\u00f3n tiene un sabor de por s\u00ed muy intenso y, trat\u00e1ndose de una salsa donde \u00e9l es el protagonista, <strong>el cognac a\u00f1ade una complejidad que eleva la receta<\/strong>. Aunque solo sean 25 ml, el aroma y el sabor del cognac aportan un toque de elegancia. Mientras tanto, corta <strong>el salm\u00f3n ahumado<\/strong> en tiras grandes. A continuaci\u00f3n, <strong>pica finamente la chalota<\/strong>. En una sart\u00e9n, calienta un poco de mantequilla y aceite de oliva para evitar que se queme la mantequilla. <strong>Sofr\u00ede la chalota<\/strong> hasta que est\u00e9 transparente. En lugar de a\u00f1adir toda la nata de golpe, <strong>agrega un poco de agua de cocci\u00f3n a la sart\u00e9n para que la salsa quede cremosa sin saturarse<\/strong>. Luego a\u00f1ade un poco de nata y mezcla hasta que todo est\u00e9 bien integrado.
