Col\u00f3cala en una fuente y ali\u00f1a con sal, pimienta, aceite de oliva y hierbas arom\u00e1ticas como salvia o tomillo. Hornea a <strong>200 \u00baC durante 25-30 minutos<\/strong>, o hasta que al pinchar est\u00e9 tierna. La pulpa se separar\u00e1 f\u00e1cilmente de la piel y quedar\u00e1 dulce y muy sabrosa.<\/p>\n<h4><strong>Dora el puerro y saltea las setas<\/strong><\/h4>\n<p>Lava muy bien el puerro abriendo la punta para eliminar tierra. P\u00edcalo fino. En una sart\u00e9n amplia con aceite de oliva, sofr\u00ede el puerro a fuego medio-bajo con una pizca de sal hasta que est\u00e9 tierno y ligeramente dorado. Sube el fuego, a\u00f1ade los portobello cortados y cocina sin mover demasiado para que <strong>se doren y se caramelicen<\/strong>. Ajusta de sal y pimienta.<\/p>\n<h4><strong>Mezcla el relleno cremoso<\/strong><\/h4>\n<p>Retira la pulpa de la calabaza asada y p\u00ed\u00adsala ligeramente. M\u00e9zclala con las setas salteadas, la <strong>ricotta<\/strong> escurrida y <strong>30 g de parmesano<\/strong>. Prueba y corrige de sal y pimienta. Pasa el relleno a una manga pastelera (truco: coloca la manga dentro de un vaso alto para rellenarla c\u00f3modamente).<\/p>\n<h4><strong>Prepara la bechamel de gorgonzola<\/strong><\/h4>\n<p>En un cazo, derrite <strong>40 g de mantequilla<\/strong>, a\u00f1ade <strong>40 g de harina<\/strong> y <strong>tuesta<\/strong> el roux un momento para quitar el sabor a crudo. Incorpora <strong>600 ml de leche entera<\/strong> poco a poco, sin dejar de batir. Sala con moderaci\u00f3n, a\u00f1ade una pizca de <strong>nuez moscada<\/strong> y pimienta. Cuando espese, integra <strong>80 g de gorgonzola<\/strong> y <strong>20 g de parmesano<\/strong> hasta obtener una salsa lisa.<\/p>\n<h4><strong>Rellena, cubre y hornea los canelones<\/strong><\/h4>\n<p>Extiende una fina capa de bechamel en la base de la fuente. Rellena los canelones con la mezcla de calabaza y setas y col\u00f3calos alineados. Cubre con bechamel, espolvorea <strong>20-30 g de parmesano rallado<\/strong> y reparte <strong>10 g de mantequilla<\/strong> por encima. Hornea a <strong>180 \u00baC durante 30 minutos<\/strong>, preferiblemente <strong>cubiertos con aluminio<\/strong>. Retira el aluminio y gratina <strong>5 minutos<\/strong> para lograr una <strong>capa crujiente<\/strong> y dorada.<\/p>\n<h4><strong>Reposo y servicio<\/strong><\/h4>\n<p>Deja reposar unos minutos antes de servir para que asienten los jugos. Dora el puerro y saltea las setas Lava muy bien el puerro abriendo la punta para eliminar tierra. P\u00edcalo fino. En una sart\u00e9n amplia con aceite de oliva, sofr\u00ede el puerro a fuego medio-bajo con una pizca de sal hasta que est\u00e9 tierno y ligeramente dorado. Sube el fuego, a\u00f1ade los portobello cortados y cocina sin mover demasiado para que se doren y se caramelicen. Ajusta de sal y pimienta. Mezcla el relleno cremoso Retira la pulpa de la calabaza asada y p\u00ed\u00adsala ligeramente. M\u00e9zclala con las setas salteadas, la ricotta escurrida y 30 g de parmesano. Prueba y corrige de sal y pimienta. Pasa el relleno a una manga pastelera (truco: coloca la manga dentro de un vaso alto para rellenarla c\u00f3modamente). Prepara la bechamel de gorgonzola En un cazo, derrite 40 g de mantequilla, a\u00f1ade 40 g de harina y tuesta el roux un momento para quitar el sabor a crudo.
