Pero esta pasta a la carbonara vegetariana con calabac\u00edn sorprende por su equilibrio: m\u00e1s ligera y fresca, con calabac\u00edn salteado en aceite de oliva virgen extra y el perfume de la albahaca, y toda la textura cremosa que dan yemas, queso pecorino y parmesano trabajados con un ba\u00f1o mar\u00eda suave y mucha pimienta negra.
