Col\u00f3cala en un colador y espolvorea sal entre capa y capa. Deja reposar al menos 30 minutos: as\u00ed suelta su agua y pierden el amargor. \u00a1Ver\u00e1s cu\u00e1nta agua sale! Luego, acl\u00e1ralas bajo el grifo y s\u00e9calas bien.<\/p>\n<h4><strong>El segundo truco: c\u00f3mo fre\u00edr la berenjena para que quede crujiente y ligera<\/strong><\/h4>\n<p>Fr\u00ede la berenjena en abundante aceite caliente (mejor si cubre la mitad de las piezas). El aceite debe estar a unos 180\u00b0C; si no tienes term\u00f3metro, una miga de pan te ayuda: si burbujea, est\u00e1 listo. S\u00e1calas y esc\u00farrelas sobre una rejilla, no papel: as\u00ed quedan crujientes y nada aceitosas. A\u00f1ade un poco de sal cuando a\u00fan est\u00e9n calientes.<\/p>\n<h4><strong>Salsa de tomate a la italiana<\/strong><\/h4>\n<p>Prepara la salsa poniendo los tomates (mejor si son frescos y de temporada, pero tambi\u00e9n sirve buen tomate pelado en conserva), con ajo y hojas de albahaca, en una olla. Cocina todo sin aceite, solo con un poco de sal, a fuego suave hasta que el tomate se deshaga y la salsa se reduzca bien. El truco: el tomate no debe tapar el sabor de la berenjena, solo acompa\u00f1arlo.<\/p>\n<h4><strong>Truco expr\u00e9s: c\u00f3mo terminar la salsa<\/strong><\/h4>\n<p>Pasa la salsa por un pasapur\u00e9 o un colador para eliminar pieles y semillas. Si quieres, a\u00f1ade otro poco de albahaca y un diente de ajo, y mant\u00e9n caliente mientras cueces la pasta.<\/p>\n<h4><strong>La pasta, en su punto perfecto<\/strong><\/h4>\n<p>Cuece la pasta al dente. Cuando est\u00e9 casi lista, esc\u00farrela y m\u00e9zclala directamente en la sart\u00e9n con la salsa de tomate, a\u00f1adiendo un poco del agua de cocci\u00f3n para que todo se una bien. A\u00f1ade algunas berenjenas fritas y un chorrito de aceite de oliva virgen extra.<\/p>\n<h4><strong>Ricotta salata: el toque final<\/strong><\/h4>\n<p>Ralla generosamente la ricotta salata por encima. Si no tienes ricotta salata, puedes usar feta de oveja, bien curado y salado (shhh\u2026 no lo digas a los italianos puristas).<\/p>\n<h4><strong>Presentaci\u00f3n y an\u00e9cdota final<\/strong><\/h4>\n<p>Mezcla la pasta con parte de las berenjenas, pero reserva algunas para poner encima antes de servir: as\u00ed tienes contraste de texturas y m\u00e1s sabor. Corona con albahaca fresca y sirve al momento. Es un viaje a Sicilia sin salir de tu cocina.<\/p>\n<hr \/>\n<h3><strong>Trucos y consejos para una Pasta alla Norma perfecta<\/strong><\/h3>\n<h4><strong>Berenjena bien seca<\/strong><\/h4>\n<p>Seca bien las berenjenas tras salarlas, as\u00ed evitas el exceso de aceite y consigues un bocado m\u00e1s crujiente.<\/p>\n<h4><strong>No te olvides del agua de la pasta<\/strong><\/h4>\n<p>Un poco de agua de cocci\u00f3n une la salsa y la pasta, aportando esa textura cremosa que buscamos.<\/p>\n<h4><strong>Ricotta salata: el aut\u00e9ntico toque siciliano<\/strong><\/h4>\n<p>La ricotta salata es clave.
